Not sure if this question has been asked/answered already.

So my girlfriend and I both play MyVegas and she has a ton of point as do I. We have booked a two night stay in the Mandalay Bay but both nights are booked under my name and not hers.

Will there be an issue for her in redeeming a buffet that says you have to have a minimum two night stay at an MGM resort? She will have her own room key and LP points but the room is not in her name. How does this work?

There may be. See the thread on "Does room for "minimum stay requirement" have to be in your name?"

The solution was to put her name on the reservation.

New Orleans 7* retreat. Food, food, and more food . . . .
    Tentatively Tahoe or LV . . . .

As long as her name is added to the reservation when you check in (verify that at check-in, even if you requested ahead), she will be fine
