I read not great things about the Monte Carlo buffet. What's nearby for that's a good buffet? I'd be interested in breakfast or lunch mostly.

Take the tram from MC to Bellagio, and enjoy their excellent buffet.

Yeah, the MC is not good at all. On that side of the street, go to bellagio or Aria (as soon as it reopens). Not too far away across the street, both MGM and PHo have good buffets

Yes, for about $20, the Bellagio has one of the best lunch buffets in town.
In fact, their lunch is better than most places' dinner buffets.

I would walk to Aria and do their buffet. That or walk to Aria then to Cosmo and have their buffet - Cosmo beats Bellagio and Aria IMO.

But if it is for breakfast, there is nothing wrong with Monte Carlo. I am a huge fan of Bellagio's buffet, but was disappointed the one time I went for breakfast. I guess there just isn't much special you can do for breakfast. Paris manages to make there breakfast special though.
