So I have a Red Room Luxury at Paris booked for my upcoming trip. From my research I have come to conclude that a Red Room Premiere is on the corners. What I have not been able to figure out is if all the Luxury rooms have Eiffel Tower/Fountain views? Thanks for any help!

Um, no. Luxury means no special view. Premier is the one with strip or pool views as stated on their website.
The corner rooms are P rooms which are not a specific bookable room class, just something you can get upgraded into.

Red Room Luxury - No View
    Red Room Premier - View

Same for the normal rooms, Luxury is no view, Premier is view, when you book both types should be an option.

P rooms give you about an extra 100 square feet over standard room. If you can score a corner strip facing, these are really nice, the bedroom does not feel as cramped.
If your going to try to get a Red Room Premier, my advise is to try to get a room at 24th floor or above for best fountain view. Also try to get one away from the elevators on the south end of building closer to
the balloon. These give the best view of the fountains, unless you want to be staring at the Eiffel tower.

If I remember correctly rooms ending in 05, 07, 09 are about dead center in the tower. Personally I like to be in rooms ending in 21 or 23 which give you a view of fountains, Eiffel tower, CP, and Cosmo.

That view is the money shot though. It's worth paying for it. That was by far the best thing about staying there in my opinion! The rooms there are just average, but that view was a million bucks.
