Our Pizza Guy Left!!

    Holy crap,went with our friends to our favorite Italian Restaurant for pizza. last night. It was terrible,no where as good as usual. Turns out the guy who makes the pies left.
    Nobodys talking either as to where he went(of course).
    We take our pizza very serious in NJ ,it has to be thin,well done crust, the sause and cheese has to be cooked evenly all over . We dont even know the guys name but we'll have to track him down,damm he made a good pie.

    I feel your pain! My 3 brothers and I try and meet once a month and usually it as the same place for noontime pizza. It's a full menu Italian place and only one guy does the pizza during the day. He knows our order and really loads up the ingredients for us. I'd hate to see him leave.

    We also do tip him directly after every visit, so that never hurts on the amount of stuff that ends up on our pizza.

    Good pizza pie makers are underrated! When I go home to PA I have a guy in my town that is my go to and he always comes through. I'd hate to have to find a new joint!

    Completely understand. My favorite Chinese place changed hands with a complete turnover of staff on the front end. The food isn't as good and the new English speaking counter staff can't take orders as efficiently as the people they replaced who barely spoke it as a second language. None of the other places in the area have ever matched up so I am kinda screwed.

    Problem solved, I make my own. High Gluten flour is the key. Set your grill to around 400 degrees or higher. Roll out the dough and put it right on the grates of your grill for about 30 seconds on each side. Chop a little garlic, brush some olive oil onto the crust, then add your toppings. I'm partial to white pizza with mozzarella and sliced plum tomatoes or Cento canned San Marzano tomatoes. Use a little corn meal on your pizza peel so the pie slides off easily into the cast iron pan. Bake for about 8 minutes, top with some fresh chopped basil and maybe a little drizzle of olive oil. You will forget what's his name.

    It's a pizza pie. Why wouldn't you call it a pie?

    Example:

    Yo, we're heading down Seaside. Where should we go for a slice?
    You gotta go to Maruca's. They make the best pie.

    I think the pie and slice is an east coast thing for sure.

    "Yo I'm gonna go down to the Greek's to get a couple slices. You want some?"

    People in Texas look at me funny when I say pie and slice.

    Same thing in MT, no one calls it a slice of pie.

    Same thing with a hoagie or a zep. East coast terms that I have to remember to not use while ordering anywhere outside of southeastern PA.

    This pizza talk has me hungry now. I'd sacrifice a small animal for an extra cheese, pepperoni , mushroom and onion right now. And a black cherry soda.

    Its funny I never even realized this was local vernacular. I thought everyone called them pies and slices.

    If I heard someone say "piece of pizza" I'd think they were foreign or from some boonies like Montana or something. :poke:

    I have never ordered a slice of pizza in my life and I eat a lot of pizza. When we go for pizza, we order an entire pizza. 14 or 16", or the large that comes out on a sheet pan.
