If you had time to do one of these with access to a rental car, which would you choose. It looks like Hoover Dam could be done on the same day as Valley of Fire.

It would depend how much time you wanted to spend. Valley of Fire is a longer drive than Red Rock, and has many more sites to see than RR. If the time wasn't a factor I would pick VoF.

As was said, Valley of Fire if you have time to spend. It is an amazing place. You could do Red Rock Canyon as a quickie if you stay on the scenic drive. But even then, you will be tempted to get out and look around some more.
My advice would be to devote a day to Valley of Fire. It doesn't pay to rush, after all you are on vacation.

You really can't go wrong either way. I like VoF more. It's more remote. Makes me feel like I have travelled back in time when I go there

Valley of Fire. Have been 4 times and Red Rock twice. Red Rock is mainly driving but VoF is more get out and walk and look and is amazing.

Both are great! Be sure to take a cooler full of bottled water - red rocks in the geology means iron. The "potable" water at Vof F is not very tasty. Great Indian petroglyphs more so at VofF

Once you get off I-15 there is a Paiute Indian truck stop to stop at and get water and ice.
