I had homemade fluffy American style pancakes for breakfast. Mrs T is a wizard with the griddle.

Pancakes, blueberries, raspberries, warm golden syrup, warm chocolate sauce.:drooling:

Had 'em last night for supper. Besides chili, pancakes is probably the most enjoyable thing a person can make.
My recipe uses rice flour, cornmeal, wheat bran, oat flour and semolina (the key ingredient).

Growing up (Episcopalian in CT) we always had pancakes for Shrove Tuesday (it's a pre-Lent thing). Matter of fact, the church always had a fundraiser - Pancake Supper. So no, it's not just a UK thing:peace:

For the past few years, I've kept powdered buttermilk in my fridge - I find I prefer it in baking to the vinegar/milk combo (I think because my favorite buttermilk use is in a cold zucchini-avocado soup) The powdered stuff lasts a long time!

Actually, it's Pazcki day but thanks for playing.

In Poland, pączki are eaten especially on Fat Thursday (Tłusty Czwartek), the last Thursday prior to Ash Wednesday and the beginning of Lent. The traditional reason for making paczki was to use up all the lard, sugar, eggs and fruit in the house, because their consumption was forbidden by Catholic fasting practices during Lent.

In North America, particularly the large Polish community of Chicagoland and in other large cities across the Midwest, Paczki Day is celebrated annually by immigrants and locals alike. The date of this observance merges with that of pre-Lenten traditions of other immigrants (e.g., Pancake Day, Mardi Gras) on Fat Tuesday. With its sizable Polish population, Chicagoans celebrate the festival on both Fat Thursday and Fat Tuesday, and also often eat paczki on Casimir Pulaski Day.

In Chicago, Paczkis were flowing yesterday. Poland celebrates it early. When the tradition started, it ran the entire week preceeding Ash Wednesday to allow people to clear their homes of all sweets prior to lent. People bring boxes to work or home to share in Chicago.

There are always enough Paczkis for everyone!!!
