I think Chicago Joe's (downtown on 4th) fits the bill. I think they opened in 1970! Great Food!

Is Bootlegger that old? My vote would be Piero's now that Venetian is long gone. On the steak front ... Golden Steer.

Loved this place when we lived there, but you'd need a car. Cab fare would ruin the evening. Their mesquite grilled steaks are wonderful!

Been there a forever! New owners, but we thought the food quality was very good and went about once a month.

Not quite as Mob style as some of the other suggestions, but Circus Circus Steakhouse (afterall it was opened by Jay Sarno), Oscar's Steakhouse, or Binion's Steakhouse may fit the bill.

The Golden Steer. Off strip a bit. I'm planning to go there next trip.

Bob Taylor's Ranch House is exactly what you are looking for. You will need a cab, as it's off the 215, Ann Road exit if memory serves me right. About a 25 minute trip from the strip --- obviously dependent on traffic.

Yes it is off the 215 and Ann Rd. But, if you don't have a car, I would skip it. It's not that worth it for a cab ride.

Damn, I was going to recommend The Tillerman and see they closed up. What a shame-that was old world Vegas close to the Strip.

Slightly off topic, but Frankie's Tiki Bar is a great mid-century tiki watering hole right off the strip at I-15& Charleston. Went there last weekend and loved it.
