I know this has been discussed before....but would love to hear everyone's new thoughts.

With so many high end steakhouses to choose from, which would you choose and why?

Which one I would choose, and which one I think is best are two different things. It's pretty hard to argue against Carnevino as they age steak longer than anyone I've ever heard of. And it's pretty hard to argue against the places that have authenticated Kobe.

But I'd choose Hugo's Cellar, Steakhouse at Circus, Binion's or Golden Steer. But that choice is based on very good quality USDA Prime beef, and I like the older style places.

"Best"...in what sense of the word?
Binion's is good food and a great view (s'pecially if you're there just as the sun starts to set).

Not a "traditional" steak house, but we LOVE Samba at the Mirage.

I'm a strip guy only and haven't eaten at them all (but I've eaten at a lot), but my money goes to Gallagher's at NYNY.

It's an old-school, classic steakhouse; no big concept, no celebrity chef, no blaring music, just great, perfectly cooked steaks in a classy but not pretentious environment.

I've eaten there probably 10 times now and I've never had a bad meal. They just know how to do steak right. Great service, most of the servers/bartenders have been there for years so they know their stuff. Solid wine list. No matter what time of year I've eaten there it's always packed at prime dinner reservation times, that tells you a lot.

Guess my runner-up is Stripsteak at MB. Little more "trendy" but also good steaks. Jean George at Aria is good too but a lot pricer.

Agree 110%! This place is a gem! It flies under the radar and really puts all of the absentee-celebrity-chef places to shame!

SW if you are looking for a GREAT wine list (and a somm who will take the time to get to know what you like) and an overall excellent dining experience. I have NEVER had anything but over the top food, wine, and service there.

In addition to Golden Steer, I'll mention Circus Circus as an outstanding steakhouse... YES... Circus Circus... it's maintained an outstanding reputation since the old days when the property was one of the town's big draws. I also have an affinity for 35 Steaks and Martini's inside the Hard Rock. No you can't get away from the property's music in there (I don't want to), but you can get an outstanding steak meal in a fun atmosphere.

I have had great meals at Hugo's, Binions, Homestead,Ruth Chris, Vic and Anthony's, Delmonico's, Carnevino.
My favorite downtown is Vic and Anthony's and Delmonico's on the strip.

35 Steaks and Martinis is also very, very good. Many places serve a bone in filet, but usually the bone for obvious reasons is very small. Largest bone in filet I've seen. And two different styles of aged meats. All USDA Prime. My best steak in Las Vegas was here on a Super Bowl weekend. Comped might influence my opinion, but it is a very overlooked steakhouse, and costs can be reduced 25% with the purchase of a $3.00 coupon at Tix4Tonight and some other sources.

Carnevino, SW, CUT, Prime, Craftsteak have impressed me most.

Golden Steer is fantastic for the Old Vegas vibe...but the food is mediocre. Grab a cocktail and soak up the ambiance and then head somewhere that will overcharge you for the great food instead of overcharging you to be able to say, "I ate in Dean Martin's booth".

The food at Golden Steer has slowly been going downhill for the last several years. I wouldn't go as far to say it's mediocre, but it has lessened in quality unfortunately.

Oscars at the plaza has been great the 4 times I have been there. The bone in prime rib is excellent.
