    Now comes the fun part, stemming, peeling and seeding 30 pounds of chiles. But this year I'm using surgical gloves. Last year's batch was a capsaicin skin killer.

    Freeze.

    They're from Hatch, NM. We don't get hot enough here to do chiles. They can going inland, but no one does it like NM (although some food anthropologists/historians suggest a lot of what today's NM gets credit for is actually the doing of what today is called AZ).

    What recipes do you use them in?

    I like going out back and picking one of my jalapenos to cut up in scramble eggs. The rest I freeze and use in chili and other sauces or cut up in fried potatoes.

    Something strange, I picked one this past Sunday for eggs and there was barely any heat at all.

    I am also suffering an attack of the dreaded horn worms. I just pick them off and crush them. No, not with my bare hands.

    I have jalapenos, green bells and sweet red Italians, which grow to an enormous size. I LOVE stuffed peppers.

    Yeah, the jalapenos I grow vary widely in heat. They're all over the place.

    Green sauce, which has some universal application, and chile verde (which of course is pork stew in a green sauce). And save some for tossing in whatever -- eggs, like you wrote, on sandos and burgers.

    Hatch chilies are damn good. The next week or so is Hatch Chile Celebration at the HEB grocery chain.

    I love driving up and down the RGRV and the air is just thick with char and chile.

    No trip to the Qwerky for us this season. I love seeing the roasters in the parking lots of all the markets. I spend a fair amount of time in CO and the way they push their green chile stew, you'd think Hatch was in their state. lol

    Oooo, I LOVE Hatch chiles! They're currently 99c/lb at one of our local grocery stores, but I want to get some that are already roasted. I cook up a big pot of vegetarian green chile and freeze it in smaller containers. Yum.

    Hi Ken we do the same here every season, only we are fortunate enough to live in NM. I give you credit using surgical gloves, I just can't do it, although I agree with the pain on the hands, even worse when you rub your eyes lol.

    We have it, roasted and we peel them ourselves, put about 15-20 or so chilis in every frozen quart sized bags, so we have chili throughout the entire winter/spring months. I make chili stews, dice it up put them on eggs, cook pork chops in the chili you name it I do it.

    The best part is just smelling the chili aaahhh I wished they had a spray scent, people wouldn't understand unless they know right?
