Upscale dining and custom dishes

    I'm not-so-refined in the palate. Will some of the more upscale places prepare a dish upon request? Something simple like pasta with creame sauce at an Italian place.

    I can't imagine an Italian place that couldn't do alfredo.

    Definitely. I used to eat at Valentino's at Venetian a lot and ask them to throw a spicy marinara sauce with some lobster or make something interesting with uni if they had it.

    absolutely.

    but just about any italian place anywhere will throw together whatever pasta with whatever sauce and/or meat you want. doesn't even have to be upscale.

    custom would be walking into a 5-star French restaurant and asking the chef to whip you up something completely off the menu like Confit de Canard with Tartiflette.

    if it's a top notch place and they have the ingredients, they'll make it.

    There's a few places where the chefs are supposed to stick to the menu. Martorano's comes to mind.

    In that case the correct job title would be something like "line cook" and not chef. :)

    Exactly. I don't have an upscale palate, but the wife does.

    Portofino at Mirage might be the sort of thing you're looking for. Phenomenal pasta, all made in-house, so I'm sure they could do exactly what you're looking for, plus there's stuff on the menu like "burrata agnolotti with lobster, chanterelle mushrooms, and roasted corn butter" which the wife might appreciate.
