I still like to go to a nice brunch, even on solo trips. I will only sit at a bar if I am by myself.

I know the Bellagio and Mirage buffets do. Sterling Brunch @ Bally's didn't used to, but not sure if that has changed since it reopened as BLT Steak. I don't remember there being any bar seating @ Bacchanal but wasn't looking for it. Aria buffet doesn't.

What about Border Grill? Jasmine? Wynn?

    Only interested in Strip places...

Wicked Spoon @ Cosmo has bar seating style tables. No actual bar though.

Not much to add other than you can't go wrong with the Bellagio buffet, and their bar seating is solid!

I'll second this, I've eaten at the Bellagio Buffet bar more than once. Though I don't mind sitting by myself even at a restaurant, it always makes me a little nervous at a buffet because I have to leave my stuff there when I go up to get more food.
