Two breakfast buffets at MGM Grand for 91000 pts
Two dinner buffets for at MGM Grand 182000 pts
Two Shark Reef passes at Mandalay Bay for 60000 pts
Two dinner buffets at the Monte Carlo for 110000 pts
Two dinner buffets at Luxor for 102000 pts
Two breakfast/lunch buffets at Luxor for 60000 pts
One Tournament of Kings admission for 30000 pts at Excalibur
Two admissions to The Foundation Room at Mandalay Bay for 30000 pts (also not subject to the 3-awards-in-30-days limit)

These meet my definition of "best no stay required". YMMV :)

I just used the two breakfast buffets at mgm for 91000 points. The lady at the m life desk told me that they are good for breakfast and lunch and also the champagne brunch on the weekends (still need to watch out for blackout days). I think this was a very good value.

Hmm. Solo traveler with only Monday weekday on agenda of fri is considered weekend.

I think Tender - Luxor $75 off $150 is a good one for a solo traveler who really wants to treat themselves. You basically have to order top shelf everything, but then pay half. Seems like an awesome way to treat yourself and take a forced time out from gaming.

I'm trying to redeem LOVE tickets for 40,000 points. Looks like a good value at $125.

I travel sometimes alone and I think the show rewards are a great option. I usually hit up the 9:30 showings, I can take my time getting dinner, and it breaks up the night a bit (I'm not a huge gambler).

For a solo traveler, I'd recommend show tickets. Because single seats are harder to sell, you can end up receiving a better seat that otherwise might go unsold. For Zarkana last week, I got a seat in Section 102 with a $195 face value after taxes rather than the $99 seat listed in the rules and regulations.

The MGM Grand buffet is the best of the lot. The Luxor has long been considered "iffy".

Not sure of the stay requirements, but we've tried a lot of the buffets. Our opinions...

    EXCELLENT: Bellagio
VERY GOOD: Aria, Mandalay Bay, MGM
OK / GOOD: Mirage, Red Rock, GVR
NOT GREAT(BASIC AT BEST): Monte Carlo, Luxor, Excalibur, Palace Station, Sunset Station

NEVER TRIED: Circus Circus, Santa Fe Station, non-Vegas ones

In order t to cash a stay required award, how/when do I have prove that I'm staying at a MGM hotel?

There's really nothing to prove. When you go to the MLIFE desk to redeem your reward, you hand over your MLIFE card and they can see where you're staying.

I would say the luxor buffet is much worse than "iffy". In my recent trip report I made note that it was free and I would not eat there again. MGM is a great option for a redemption on MyVegas.
